Food Waste Project

 

  1. For one week (7 days), keep track of everything that you eat and drink and the food waste generated by what you eat and drink.
  2. List the foods and beverages that you eat and drink over the course of the week and the waste items that result from this.
  3. Take pictures of the food waste—either in multiple pictures that you compile onto several pages of paper and submit with your assignment or as a picture of one pile of trash that you save (you might need to keep it in the freezer so it won’t start smelling while you collect it).
  4. Weigh the food waste that you generate (either piece by piece so you can throw away the individual items and then add the totals together or weight the total amount as a plastic bag of trash for the week).
  5. List any food waste items that you weren’t able to take a picture or weigh and indicate why you weren’t able to include them.

****For example, if you ate a sandwich, chips, apple slices, a cookie, and a soft drink from Subway, you would be able to save the chip wrapper, the plastic from around the apple slices, the paper wrap from around the sandwich, the plastic bag that the sandwich was in, the napkins that came with the sandwich, the empty glass, the straw, and the plastic wrap that the straw was in, but you wouldn’t be able to weight all of the trash involved in preparing your meal—including the gloves that the person wore that made your sandwich, the apple core from your apple, the food waste while preparing the veggies that went into your sandwich, etc.

****In the same manner, if you ate lunch at a buffet and ate cantaloupe, watermelon, and a fruit salad with bananas, oranges, kiwi, and Jell-O, you wouldn’t be able to take a picture or weigh the peelings and rinds from the fruit or the box and paper container from the Jell-O mix.

This time make a conscious effort to reduce the amount of food waste that you generate.  If you have a way to compost degradable food scraps, this can be done so that banana peelings, egg shells, apple cores, etc. are not counted as food waste.  Be sure to list that you composted those items if they weren’t thrown away.
  4. Follow the steps 3-5 to document the food waste that was generated for the second week. You can weigh the amount that was composted as well if you are able to do this so you can report on how much food waste you saved from the landfill.
  5. Write a 2 page double spaced paper in which you reflect upon your efforts to reduce food waste. Was it easy, hard, enjoyable, challenging? What made it that way? Also–analyze how much food waste you were able to reduce.  You can calculate this by subtracting the weight of the food waste from the second 7 days from the weight of the food waste from the first seven days.  Be sure to talk about the food items that you weren’t able to weigh and how they differed from each week’s collection to help in your analysis.  You can also compare the types and numbers of items from the first week to the second week to see if you were able to reduce certain types of things such as Styrofoam cartons, paper cups, and plastic silverware.   As a result of your analysis, conclude if you were successful in reducing the amount of food waste that you generate.  If you weren’t successful, contemplate why that might be—and include your analysis of that in your paper as well.    Be sure to include with your report the information collected from #2-5 for the second’s week of data.  Due:  _______________
  6. Notice the food waste that occurs in the foodservice operations that occur on campus. How has your perception of food waste changed after completing this assignment?  Many waste reduction strategies cost money to implement and keep running on an ongoing basis including sometimes needing to hire additional staff.  Foodservice operations are on very tight budgets where it can seem impossible to afford to make changes without raising prices.  What ideas do you have for ways to reduce food waste with our campus foodservice operations?  Do you think that students would be willing to pay more in order to reduce food waste if that is what was needed for it to happen?   Or do you think that students might be willing to purchase different things that generated less food waste if they knew more about the topic?  Write a ½ to 1 page double spaced paper answering these questions.  Due: _____________.

Spelling and grammatical errors are abundant.   Submitted components are confusing and difficult to understand as written and submitted.  Sentence construction is very poor and lists are poorly organized.
